AHi Bakers!

I am currently starting my own baking business and have my first professional order. It's an 8" fondant covered rainbow cake with a batman theme. The client is coming to pick it up on the morning of the 27th.

Is there any way that I could make the sponge layers tonight and keep them fresh until she comes to pick the cake up on the 27th? I need them to stay fresh, and I'm hoping to complete the decorating tomorrow - it's so hard to fit baking around my job and appointments sometimes!

Is there any ways that I could keep the sponge layers soft and moist preferably WITHOUT freezing them?
