Hi Bakers!
Does anyone have a great vanilla cupcake recipe? For the life of me I cant seem to get the one I have (below) right. From just looking at it, it seems that there should be more butter so I did it as is (which came out a bit crumbly) and I did it with more butter and it didn't come out right at all (it sunk in the middle).
Anyone here have a great recipe or can you give direction or making sure the cupcakes come out perfect? Thanks!
Ingredients:
* 1/2 tsp. baking powder, sifted
* 1/4 Tsp. salt
* 8 Tbsp. (4 ounces) unsalted butter
* 1 3/4 cups sugar
* 2 large eggs, at room temperature
* 2 1/4 tsp. pure vanilla extract + seeds from 1 vanilla bean
* 1 1/4 cups whole milk , at room temperature

I have much better results on cupcakes when I use grease proof liners that are standard extra tall. Moist crumbs on tester, not clean. Remember me when you really do bake your way to wealth! I use FromScratchSF's white cake recipe for cupcakes as well as cake. Works very well and tastes wonderful.
