AHi all I'm in the UK and need a recipe for a delicious chocolate cake that bakes well and doesn't fall apart when I take it out the oven or cover it in fondant. I've got a 4 tier tree wedding cake due 4th July and I'm having great difficulty bsking a chocolate cake rich enough for it. I've got maderia and lemon cake done to a 't' but can't seem to bake chocolate cake. My attempt today rose cracked massively and hardly tastes of anything :-(

The customer is using the cake as their dessert for the wedding so it needs to be pretty yummy and at the moment I'm really panicking I'm going to end up buying a 14 & 10 inch chocolate cake as mine aren't working!

This is only a hobby so I don't have time to experiment too much as I've got to work and look after a 5 year old too!

Any help and excellent no fail cake recipes greatly appreciated. (I used to have a fab recipe but have lost it!).

Thanks!

I use this chocolate cake recipe and everyone loves it:

Dead simple to make, scales well and lasts nicely.

AI used this one recently, http://www.lindyscakes.co.uk/2011/02/02/lindys-chocolate-fudge-cake-recipe/ but reduced the sugar by a third and made sure to use 74% chocolate (from list). It seems really soft at first but matures into a very fudgey cake. It has a big crust which needs to be cut off (and eaten by the baker).
