AI am making a cherry blossom branch cake, I will need 50+ flowers. How far ahead do I need to make these flowers so that they will be dry? I was thinking 3 or 4 days. Any help greatly appreciated.

I'm not sure buttercream is the best option for your cake. Putting buttercream on the branch will be very unstable. Make them out of gumpaste a few days in advance.

If you really don't want to use gum paste then you could make them out of royal icing. With RI you could make them weeks in advance and store them covered until use.
