I like the writing on these cookies but not sure if they are printing on edible paper, then cutting out a little rectangle and placing on the icing?  Can't see any paper so not sure....

My guess would be:

They traced the image on the cookie using a KopyKake and an edible marker.

They look too perfect for tracing. I'm guessing they had a stamp made and stamped them with edible ink.

I doubt they are printed on edible paper because I did that with these cookies and although you really can't see it in the picture the outline of the paper was visible. Barely, but visible.

it is a special maching that actually stamps the cookie; not an edible image. these machines are very pricey (thousands).... i forget what they're called

I would say definitely not edible paper.  Way too nice.  And my guess is that since they are all sooo perfect, it's not a KopyKake tracing, although possible.  I would say it is either an edible ink stamp or airbrushing over a stencil.
