Has anyone used fresh raspberries folded into IMB filling? I have a groom that wants fresh raspberries, not a puree, added to the filling.
AI did once with raspberries from my own yard that I picked after I was sure the sun had dried all traces of morning dew off. Then I gently folded them in trying not to break many and filled my cake and carried on. It worked out fine there were only a few spots on the cake inside that had seepage of raspberry juice if the odd broken berry. I did keep the cake very cool until it was time to let it come to to room temp and serve.
