How do I make brown buttercream without adding chocolate? I need it to be a dark brown.

You can add dark brown color... Use the Americolor gels and do it ahead of time to let the color develop...

AI agree that you want to do it ahead of time, adding color every couple of hours and even letting it sit over night. If I know I am going to have to add a lot of gel coloring to get desired color, I will hold off on thinning my icing with milk and/or corn syrup. I don't care what some may say, adding a lot of coloring can affect the consistency of the icing...

There are also powdered food colors that help to get darker saturated colors.

AWhy doesn't your client want chocolate? Won't the guests find it weird to see dark brown icing and not taste chocolate? Hehehe chocolate.. Yummm...don't mind me, just thinking out loud :)
