AI'm making a cake that'll just have buttercream and the quilting pattern on it. My question is do you have to use a certain kind of buttercream for the pattern to form on?

AI like to use a crusting buttercream for that.

Crusting is easier, but you can do it with meringue buttercreams if you start with a cold cake.
