I have been baking and selling cupcakes out of my home for some time now. I am thinking of starting up a cupcake shop. I have always read that you should never refrigerate cupcakes, it speeds up the drying process. I usually bake them fresh and people would pick them up. Many cupcake store have the refrigerated cases and some have them just on the stands. I love the look of glass case with no fridge and the look of them just on cupcake stands. Please advise!!!
