My specialty is not cake pops but I have made them before. I have found that if you let them sit for more than 3 days they start to leak oil. This has been my experience. Perhaps some one with more experience can elaborate a bit more on this topic.

For the best taste and freshness, about 3 days, but I have kept them for 7 days and they were fine.  For a customer I don't' recommend keeping them more than 3 days.

Ok so no sooner than the 26? Is it possible to freeze them or is that a bad idea??

If you freeze them they might sweat while they defrost.  Try freezing one and see what happens, though.  Good luck!

AIf you're freezing the cake part you can make those up weeks in advance. Let them thoroughly defrost before putting the stick in and dipping them.
