Madeira Cake Help

Hi All,

I am trying to bake a 12 inch square madeira cake in a 2 inch deep cake pan. I figured out that I will need 750 grams each of butter, self raising flour, sugar and 350 grams of all purpose flour and 12 eggs. However I am not so sure about baking times. I tried 1 and half hr at 325 F and the crust was too crusty and inside a bit dry. Do I lower the cooking time and /or temperature? Any help if appreciated

AI bake in an aga, so it's a little different to you but I would certainly lower the cooking temp to 140c. Sorry not sure what that is in f but it's lower! Also try wrapping the tin in several sheets of newspaper and placing tin on a card sheet. Using a sheet of foil loosely overly the top towards the second half of the cooking time also reduces the crust.

Thanks Scarlet your advice did help. Lowered the temperature to 290 F (~143C) and used store bought baking strips and covered the  cake tin with foil after 40 mts.
