I've seen diagrams on how to achieve this effect using wedges between the tiers. 

is possible to use the SPS system with the wedges? And how would you go about doing so? Or do you just dowel the heck out of it and hope it stays together?

That is a pre made support system used on that cake. SPS would not work

ACraftsy have a class called ' Topsy, Turvy Cake Construction' with Richard Ruskell. He also teaches similar designs. It not a cheap class but well worth the instruction he gives. Takes all the guess work out.
