I'm attempting a guitar-shaped cake for my husband's birthday this weekend. My concern is storing the cake as it has to assembled all at once (from the tutorial I got). Doing it all the day before isn't possible as I have an 18 month old who can't be left alone too long :P

How long can a pound cake, filled and iced with buttercream frosting and covered with fondant last without freezing or refrigerating? I have a coldish basement (insulated, not heated) that it can be stored in if it won't affect the colour/stability of the cake.

Thanks!

If the cake is just sitting out in room temperature it can last anywhere from 1-2 days. If refrigerated up to 7 days. Depending on how cold your basement is, the cake should last about 3-4 days down there. The basement would only effect the coloring if it was heated.
