Fondant Working Mat

Hi I need a mat to make my gum paste / fondant decorations that will allow me to use a exact knife without damaging it. Pleasssse help?

I've seen videos of some decorators using the "self healing" cutting mats that quilters use.  Joann's, Hobby Lobby, Walmart and more carry them (download coupons for the craft stores.)

The biggest issue with the self healing mats is that they're not supposed to be used with food.  I've even seen some in Joann with stickers attached saying just that.

 

Admittedly, a lot of gum paste isn't eaten, but I won't take the chance.  I buy cheap, flexible cutting mats--2/$1--at the Dollar Store and use my cookie cutters and exacto knife on those.  I get 4 sides and I can cut them up to make straight edges, shape templates, etc.  I get a lot of bang for me buck.
