Hi everyone, I just finished watching Alan Tetrault's course on Cake stenciling and he says that you cannot stencil on buttercream if it is not a crusting buttercream. Since I mainly use SMBC because it is not as sweet I was wondering if this could be done on a cake covered with SMBC that was refrigerated and the icing hard? Also can I use Royal Icing or the SMBC?

I have done it. I used a "happy birthday " stencil on top of a round smbc covered cake. I put the filled, covered cake in the freezer for about 15 minutes so it was well chilled, then stencilled the top of the cake, then did the trim with smbc.

I have stenciled on SMBC several times with great results.   Before the first time, I tried using butter cream and RI and the RI was the easiest to do.  If you look at my cakes, the peacock cake has the stenciling on Gumpaste because I wanted the feathers to have some dimension.  I also use stencils with airbrush color on SMBC.
