I was wondering if anyone would share some of your recipes that work well using a crock pot?

1 lb stew beef cubed into 1" pieces (braze if desired for more flavor)
1 large pkg mixed veggies
2 potatoes, peeled and cubed
1 small onion chopped or diced
1 pkg brown gravy mix
8oz mushroom pieces (can be fresh or canned. if canned toss in juice too)
dash (or more) of pepper
2-3 bay leaves
Optional: dash or two or more of Worcestershire sauce

all in w/ enough canned beef broth (low sodium) or water to cover meat
low all day (at least 10 hours)
open set to high and allow 30 or so min to thicken up a bit.
remove bay leaves
&
serve w/ big chunks of rustic bread. (could even do a bread bowl)

I found this website a long time ago when I was looking for crockpot recipes.

This makes a hearty meal and is quick and easy to prepare

Meatball Stew

1 can beef gravy
1 can tomato soup
1 large bag of meatballs
potatos (as many as you want)
carrots (as many as you want)
celery (as many as you want)
onion (optional)
mix all together and cook on low for about 8 - 10 hours

Crock Pot Tamale Pie

  1 lb. lean ground beef
  ¾ cup yellow corn meal mix or ¾ cup plain yellow corn meal and 1 tsp baking powder
  1½ cup milk (I use 2%)
  1 egg, slightly beaten
  1 package of chili seasoning mix
  1 tsp. seasoned salt
  1 can diced tomatoes
  1 can whole kernel corn, drained
  1 small can sliced ripe olives, drained (Optional)
  ½ - 1 cup grated cheddar cheese

In skillet, brown ground beef until crumbly; drain. In large bowl mix: corn meal, milk, egg. Add drained meat, dry chili seasoning mix, seasoned salt and tomatoes, corn and olives. Pour into crock pot. Cover and cook on high 3-4 hours. Sprinkle cheese on top, cover and cook for 5 more minutes.

This is really good, great light texture and tastes like tamales.


CROCK POT DRESSING
1 (8 inch) pan cornbread
8 slices dry white bread (I like to use crackers)
4 eggs
2 c. chicken broth
2 cans cream of chicken soup
1 tsp. sage
1/2 tsp. black pepper
Chopped Celery to taste
1 med. onion
2 tbsp. butter

Mix ingredients except butter. Place in crock pot. Dot butter on top. Cook 2 hours on High then 4 hours on low.
I half this recipe for small crock pot and to make for 2 people. I add cooked chicken to the mixture and save some of the chicken broth to pour over the top (poke holes in dressing so it will soak in)

This is one of my families favorites.

FRENCH DIP SANDWICHES

Lean chuck or rump roast
1 pkg au jus mix
1 pkg Good Season's Zesty Italian (dry) dressing mix
1 can Campbells beef broth

Place roast in crock pot. Add the au jus and the dressing mix and pour can of beef broth over roast. You may add a little water however I prefer to add a second can of beef broth if needed to cover the roast.

Cook on low 8 hours.

Serve over French bread that has been buttered and slightly toasted under broiler. Serve extra au jus in small dishes for added dipping.

I have a totally easy Yummy French Dip.

A Roast (fat trimmed), 1 can beef broth, 1 can Cambells French Onion soup, 1 can of beer. Put all in crock pot on low for 8 to 10 hours. Shread and put on hoagie buns and use the juice to dip. YUMMM icon_lol.gif
