Ajust wondering what you guys do if you do a cake a few days before pickup ? do you freeze them? Put them in the fridge ? What do you store them in? how long can you leave them out at room temp for ?
Hi....Wow....Loaded question. If the cake has perishable ingredients, such as the filling,Â that require refrigeration, then they cannot be left out at all. Â That being said, Â I bake my cakes as much as a week in advance and freeze them. Â I remove them from the freezer the day before they are due and torte and fill. Â When they are in the freezer, I store them in tightly wrapped Saran wrap, double wrapped.
Ayea I know it's a lot to ask but I was always worried about freezing a cake and loosing freshness. If it's just a buttercream do you still let it sit out ? I used to put them in the fridge onced iced but they get hard & a wee bit dryer I find
Well..In my experience, IÂ findÂ Â that the buttercream seals in the moisture in the cake. Â I keep my buttercream frosted cake refrigerated until right before I box it up and deliver it. Â Alot of time the cake will only feel dry because the buttercream has "crusted". Â If you are concerned about moisture loss, some bakers brush their cakes with a flavored sugar syrup before frosting to seal in moisture.
