Boar Head Cake - Need Help With Price To Charge Please!!

Hi everyone,
I'm new to the forum, and am in need of some advise.
I have been requested to do a boar's head cake for a medieval party, and am really not sure what to charge. Cake will be for approx 30 guests.
This is the photo that the customer sent me, and would like me to create. They want real fruit around the head.

AWhen I quoted the hogs head in my gallery, I estimated the time and such to rub about $500 before tax & delivery. Knowing what I now know, I'd charge $700. Mine serves 40.
For me, the hardest part was the ears. I redid them 8 times.
Also, structure will be very important.

For a ake like this the serving count is really only important in thta it gives you an idea of how big a cake you'll be workign with. Don't price this kind of thing by the serving, price it by the time it will take you and the cost of special materials you'll need. My 3-D cakes start at $200 and that's for something simple. I'd probably charge $500 for a realistic hog's head.
So...I gave the customer a quote of $570 including delivery. He responded surprised at the price...said he had another quote as well, and my price is 4 times higher than the other. I can't see anyone doing that for $140...oh well. Thanks for the help though.

And if he hires that person they'll realize about halfway through that they grossly underpriced that cake.
