I have a question that relates to most chocolate mud cake recipes  and it is as follows. Most recipes call for "coffee" What exactly does coffee do in a chocolate mud cake? Does it need to be there?  

It means instant coffee granules. It'sjust to enhance the chocolate flavour - you can't taste coffee in it. You can leave it out if you like.
