I'm looking for a GREAT yellow cake recipe (scratch). I've made a few but they just didn't come out as moist as I'd like. Can anyone help me? TIA

ANick Malgieris yellow cake

3/4 c butter 1c sugar 2t vanilla 3 eggs 1 3/4 c AP flour 2t baking powdrr 1/2 t salt 1/3 c buttermilk

Hi Nancy-

Sorry it didn't come out well for you. When I've made it always comes out moist and buttery and yes, it is a thick batter.  I got the recipe from his Modern Baker cookbook and double checked it and it's correct. I'm sure you will like From Scratch's recipe as I've also made that recipe and it makes a great textured cake. Good luck!

AJerry, I must have done something wrong! Is it supposed to be moist or dense? Or maybe I didn't have my butter soft enough? Any thoughts? Nanc

ABTW, my son lives in Brooklyn, my daughter goes to college in NYC and my parents live on Staten Island and my husband was a NYC firefighter! I come down from way up north a couple of times a month! Nancy

I am minimally charging for the recipe now but haven't figured out how to do it.l  It's my mission to figure out how to do today.  It's not as easy as I though it would to just add a stupid button to the blog!  LOL  Anyway I'm sorry I'm working on it right now.

We're closer than we think!  The only thing I could think of is how the flour was measured.  Did you fluff it up and then spoon lightly into dry measuring cup then level off with straight edge?  Did you use large eggs?   I don't think butter softness was critical unless it was going to mixed all together with the other ingredients at one time.  Since it is creamed with the sugar first it should be OK.  Did you mix for the full 3 minutes- he made a notation on the recipe to make sure to do this.  Of course, it could be just a subjective thing too!

AYou know, I was thinking maybe I didn't cream the butter and sugar enough? With my kitchen aid, the mixer doesn't grab all the butter because the amount is small. Or maybe the flour mistake.
