Im planning to full my cupcakes with custard. I was wondering how long i can leave it out for before having to refrigerate them. Planning to serve them at a party =) please advise! I know custard grows bacteria easily..so what is the safety hazard when handling them for cake or fillers?
AI would keep them refrigerated until 10 mins before serving time in an air conditioned room, but no more. Pastry cream is very perishable and I'm a bit funny about things like that.
Assembly time + decorating time + transport time (if any) + display time = four hours max. Then they get tossed out.
