'fluffy' Flower Centres

AA client has requested a version of the cake below. I thought the flowers had centres similar to a poppy but they appear to be fluffy! I've searched for further images and have found others with this style of centre. Does any one know how these centres are made? I'm dying to find out!

If you want a little different look, here is my version of this cake my sister and I did for a friend of hers. This cake was her wedding gift and my sister didnt want to do the thread centers so we just made a little cone out of gumpaste and cut into it with scissors. Please ignore the broken petals because the bride forgot to update us that she had to move the wedding to a hour earlier. We just had time to set it up before the wedding started and we wasnt as gentle as we should have been, lol.*
