AI've got a sponge cake that will be iced to make for a birthday on Saturday. Can I make the cake on Tuesday and ice Wednesday will it stay fresh? When would be the best days to make and add rolled fondant?

AI've never made a cake more than 3 days in advance. The fondant will help preserve the cake though. I bake up to a week ahead, and freeze. So maybe you could bake and make the icing and then ice and cover on Thursday?

I usually bake on Wednesday for a Saturday cake.  Bake Wednesday, cut, fill and dirty ice on Thursday and finish up on Friday, and if needed Saturday morning is for touch ups and last minute details.
