AHi all, can I ask what your views are on freezing cake? I've heard some say it dries them out and others say it adds moisture?

hi, I do freeze all my sponge cakes in advance. I wrap them in cling film and then foil, I usually place them on a cake board or put them in a larger tin to help keep their shape in the freezer. I start to defrost them on the day I need them I find it much easier to handle the cakes and cover them when they are semi frozen. I have never had a dry cake yet, you can always use a sugar syrup on the sponge after baking or before decorating.
