Searching high & low for a recipe to pair with Amaretto Cake.  I normally do a Amaretto Mousse Filling w/Buttercream icing for this cake.  However I have been ask to come up with a Caramel icing (Lactose free.)  I prefer to use scratch recipes. Most Caramel icings have either cream, milk etc... the mousse filling I use includes cream.  Cannot seem to find anything to pair with this cake that meet this ladies request.  Is there a 'Caramel Flavoring' perhaps?  Does anybody have any suggestions?   Thanks!

use coconut milk maybe? i haven't used it much but it's all the rage now -- just a thought --
