I am making a small 3 tiered cake...8 inch 6 inch and 4 inch ontop...The customer is wanting the varagated colors in the rose swirl technique.Should I use a smaller tip than a 2D or 1M as I move up to the 6 inch and 4 inch tiers??
I think I would. Start out with a 1m and go no smaller than a 21 on top. I use this when I am doing the basketweave. Always 47 on cakes 8" or smaller and 48 on cakes larger. I have never done this on stacked cakes though. You could always try a few rows on the outsides of the pans to "see" how it looks.
