AHi,

I made some fondant. I was wondering how long I can store it on the counter before it goes bad if I wrap it in seran wrap a couple times and put it in a ziploc bag. Is it better to refrigerate/freeze it if I don't need it for 2 weeks? It's for covering a cake.

AWhat kind did you make? Most can be refrigerated for between 2 and 6 weeks. You have it wrapped sufficiently but I would not leave it on the counter. I tend to just store mine in the refrigerator until I need it.

AI made the kind with corn syrup, glycerine, and gelatin. If I refrigerate it, how far in advance do I take it out?

AI would probably take it out an hour or two in advance as it gets stiff in the refrigerator. It also depends upon how big of a lump you have of it. I have also learned to color my fondant right when I make it and then refrigerate it as it just seems to be easier that way and helps if I am in a crunch for time when I go to cover/decorate the cake.
