AHi,

I'm making my dads 60th birthday cake he doesn't like things too sweet so I was thinking of making a lemon syrup cake and covering with fondant to decorate. I'm stuck on what to put between the cake and fondant! Any help would be greatly appreciated. Jess

I always use straight lemon curd in between lemon cake layers.  People really like how tart it is.  It's sweet, but it's like the tartness cuts it quite a bit.  You could also do cream cheese icing or white chocolate ganache (but that would be really sweet).

I forgot to add that I would put lemon zest in the cream cheese icing.
