I have a request for a 3D cadillac cake. They requested red velvet with cream cheese frosting. I am carving the cake so I need a strudy red velvet recipe. I am also worried about the cream cheese frosting under the fondant. Does anyone have a carvable red velvet recipe you have tried?
My other option is to use a white cake with chocolate ganache which would be much sturdier but not their first choice.
Any suggestions would be appreciated.
AI think any red velvet cake would be carvable, and I wouldn't recommend using cream cheese under fondant. Maybe fill it with cream cheese and use buttercream under the fondant?
