Fondant Covered Banana Cake

AHi Everyone, Newbie cake decorator here! A friend of mine has asked me to bake a iced banana cake for her mum's birthday. I have been baking fairly regularly for the past few years but have only iced 2 cakes ever - only buttercream not fondant. My question is: She said her mum doesn't like buttercream so what shall I use to adhere the fondant? Or will she not notice if its just a crumb coat under fondant? Have been doing loads of research and know that cream cheese (though lovely with banana cake) would be a risk under fondant and can't be left out for too long (I don't know if it will be refrigerated consistently). Second question, shall I do 2 layers with filling or is that too risky for my first fondant experience? Appreciate any advice and loving this site!

ABtw the cake is for a 60th birthday and on Saturday! Any advice/tips reeeeally appreciated :)
