Need A Cupcake Recipe That Is Easily Changeable (For Different Flavors)

AI'm looking for a recipe to use that I can sort of build my own recipe from, like one that uses milk that I can substitute with flavored creamers or how to substitute peanut butter kinda thing... Im a recipe making amateur :/ thanks!

basic recipe I always use when I'm altering flavours....



·         170g Butter

·         170g Caster Sugar

·         170g Self Raising Flour

·         1.5 tsp Baking Powder

·         3 eggs, beaten

·         1/3 cup milk

·         1.5 tsp Vanilla Essence

I use Buddy Valastro's Vanilla cake recipe without the pastry cream. If you Google it, you may sometime see "pastry cream (optional)" in the recipe. 


I have added flavorings, fruit juices and spices to it and it has turned out great every time. If you do add fruit juice like lemon or orange, you do need to cut back on the liquid in the cake.


For spice cake, I just add a bunch of spices. I don't measure. :)  


I have tried to decrease the flour and add cocoa in place, but it didn't turn out great, so I wouldn't recommend turning it into a chocolate recipe. The texture was fine, but it was a little drier than I wanted.


I do like to use the LorAnn flavor oils and flavorings. I made a maple cake using the flavor oils and adding it to the batter. If you use those, you don't have to decrease any of the liquid measurements. 


OH! It calls for 4 extra large eggs. I don't always buy extra large, so I just use 5 large.

One more thing. It makes about 36 cupcakes.

I recently ran across a recipe for small batch vanilla cupcakes. Very easy and DELICIOUS! I tweaked it a tiny bit, and it comes out great every time. Oh! I also mix everything with a whisk in the same bowl - all at once! (oh no! where are the baking police???). I hate using my stand mixer for something this small! I don't know why. haha!


I haven't doubled the recipe, so I'm not sure how it will turn out, but I think you will like you go!


Small Batch Vanilla Cupcakes

Bake: 15-20 minutes
Yields: 6 - 8 cupcakes

2/3 c. flour

1/3 c. sugar
1/2 tsp. baking powder
1/8 tsp. salt
4 tbsp milk
1/2 tsp. vanilla extract
5 tbsp. butter, softened
1 egg


Whisk all dry ingredients together. Add the wet ingredients and whisk until smooth. Batter will be thick. Fill muffin tins about 3/4 of the way full and bake 15-20 minutes at 350 degrees.
