I got a request for a three tiered cake, the bottom with be Styrofoam, the top two tiers to be made out of the client's Chocolate mayonnaise recipe. Has anyone ever done a tiered cake with mayo cake? Will it hold up? I'm just worried it will be too moist and turn into a huge blob mess under fondant and the weight of the top tier.

the typical mayo cake will not be a problem in building a tier cake--

 

but i suggest that you make one recipe first to see how it does for you--no telling what kind of recipe you'll be given--i never do stuff like this myself--

 

for a tier cake --i retain all the control until i walk away from the cake table to my car after delivering--

 

my stock response is "i don't do legends" for example if someone wants me to make aunt louise's recipe--

 

for a 9x13 at private chef pricing--maybe--for a tier cake, never
