I've seen oatmeal apple raisin cookies but you can't use oatmeal if it needs to be gluten free.  Is it just the taste?

Oats instead of flour; you could leave out stuff (e.g., dates, walnuts, raisins) if you didn't want those. And of course add cinnamon.
