AI was wondering if I could get a bit of advice. I am making my friends wedding cake for this Saturday 3 tier 12,10 and 8 inch choc lemon and vanilla sponge. I work full time so only have evenings to get it all done so today I have baked the 12 chocolate cake.

I don't really want to put it in the fridge but I will be covering it on Wednesday evening. If I wrap it totally in cling film until Tuesday then do my crumb coat with ganach and then cover with fondant we'd will the cake be ok???

Just worried about it keeping fresh but have the other 2 tiers to do so had to bake it today.

I wrap mine in 2 layers of plastic wrap and freeze.

AOk so if I do that tonight and take them out Wednesday morning before work will they be ok to crumb coat by we'd evening and do I leave them wrapped while they are thoring x
