I have a few questions about these. I used them a couple of times now, and while the center doesn't bulge up, I still feel like the sides cook up quicker than the middle. Should I use a flower nail along with the bake even strips? I use wilton pans I don't know if this makes a difference or not. Please help.
AHow big is your pan?
Woops sorry I used two pans, 8x2 and 8x3 both filled up with the same amount of batter.
Try a flower nail, it might help, but in a pan that is 8" it might not make a difference.
The 3" pan, however, is a different story...it's very difficult to get a 3" pan to cook evenly. I sold mine on Ebay.
Yeah I was really excited about the 3'' pan but after baking in it a few times (filled with 4 cups of batter) all I got was gummy centered cakes. People raved about the cakes though lol! The middle took forever to cook! I thought my cake was going to be a huge hockey puck. Thankfully it wasn't, but I prefer a better crumb.
