Agbay Used To Level Icing?

This may be a silly question or may have already been explained somewhere but I can't seem find the answer I'm looking for. I've read where some of you have used the Agbay leveler to slice off a layer of icing from the top of the cake for a perfectly level cake. Do you simply "saw" through the icing as you would the cake layers? How do you remove the icing without damaging the smooth layer underneath? Thanks in advance for your advice.

Hmm..I imagine you'd use a cake fresh from the fridge?
