Sanding Sugar Cupcakes

I'm making stiletto cupcakes next week.  All the pictures I've seen have sanding sugar coating the cupcake.  Is it better to dip the cupcake in the sugar or pour the sugar over the top?  I want them to be very opaquely covered.  I'm afraid the frosting will fall off or get in the sugar.  And would you recommend not refrigerating them because of the Pirouette heel?  Thanks!

APut the sugar in a bowl and dip. The frosting will not fall off as long as the cupcakes aren't warm!

If you want just a light sanding you could always put groups of them at a time into a tray/container etc and sprinkle - then you can just collect up the sugar that didn't stick and reuse it. I wouldn't put them in the fridge - the sugar will absorb the moisture and 'melt'.
