AHi everyone I am doing a big cake order this week for next Saturday 21 Sept. And was wondering if it would be ok to start making the cakes on Sunday. And whether it would stay fresh for the sat after

AWill it be fondat covered? I always make fondant cakes a week in advance, so long as your filling is stable (doesnt need to be refrigerated) you'll be fine :-) I like to tort, fill and cover the day it's baked otherwise I fridge/freeze it so it doesnt dry out.

AHi yes it will be covered with fondant. The filling is going to be chocolate spread so it dont have to refrigerated. It is going to be dirty iced with buttercream.

As soon as they are baked, wrap them well and freeze them.

AI would bake and freeze the layers, pull them out only long enough to fill and ice and back in the freezer until ready to cover with fondant and finish decorating.
