AI have a wedding of 220 cupcakes coming up in a week. Recently when I've been baking my cupcakes have started coming away from the cases almost as soon as they're out the oven! Help!!!!!! Ive not stored them anywhere I can see it happening as they cool!
Have you done any of the following recently:
1. Changed your recipe
2. Changed your cupcake liners
3. Changed your oven temperature - use a separate thermometer that hangs inside the oven to check your oven is not on the blink
4. Been baking longer orÂ less for a recipe you know works
5. Is it hot in your kitchen?
Any and all of the above can affect the liners peeling away. Start changing things bit by bit until you get a batch that works. You don't have to bake all 12 cupcakes (or whatever a batch gives you) in one go. Bake just a few, until you nip it in the bud. It's maddening but is usually fixed by sorting out the above.Â
AI haven't changed anything! Could it be to do with how moist the cake mix is in the first place?
Not necessarily - I bake cupcakes with all kinds of batters - liquidy or thicker, and they don't peel except for 1 recipe, sometimes. I use liners that I know work, and the only time my chocolate cupcakes peel is if I overbake (by like, 1 minute), or if I leave them in the pans after taking them out the oven - I have to get them out straight away (otherwise they continue baking in the hot pan).
Sometimes they peel on me if it is warm in the bakery overnight, but you said it happens straight away, not after storage.Â
Well if you haven't changed anything, there must be something going on since you said in your first post that it is happening recently....are you sure your oven is baking at the right temperate?Â Maybe you should start testing another recipe or something, even if you only use it for this wedding?
this happened to me too, but it was because i UNDER BAKED the cupcakes!! :s it was heart breaking to watch the liners peeling away from the cupcakes as they cooled!!Â
AThis sometimes happens when I bake gluten-free cupcakes. Upon looking into it I discovered that it was too much xanthan gum in my flour mix that caused the cupcakes to shrink away from the liners as they cooled. If you are using a box mix it might be worth checking to see if there is xanthan gum in it. (I have no idea if they use it in regular cake mixes.)
This happens to me sometimes too. but it only ever happens while they cool on the bench. A few times I've had to quickly cool some cuppies in the fridge, and it has never happened when I've done this. So maybe try putting them in the fridge to cool down and see if this helps.Â
This happened to me once with no time to re bake, so the ones that pulled away from the liners, I took out of the peeling liners and placed in a fresh liner so at least it wasn't used looking
