I finally did it! I covered a 6" round and a 8" round with homemade MMF!!!! I finally got the consistency right! Success comes with practice!
So excited! I have another cake to do this coming weekend and 2 more in Sept. And possibly one in Nov.

Marsh Mallow Fondant
My marshmellow fondant recipe is 16 oz. mini marshmellows, 1 Tbsp water, 3/4 bag of 2 lbs. confectioner sugar, 1 tsp. light corn syrup and 1 tsp clear flavor (I use vanilla)
Put mm in microwave safe bowl, pour water over and heat until melted.(Grease wooden spoon with shortening to stir mm) Stir in corn syrup and flavor (you can also put in coloring at this point if you need the whole thing one color - I normally color just the amount I need after its all mixed). Pour all this into bowl with confectioner sugar and mix with wooden spoon and then with your hands until no longer sticky and its a great big ball. (You can add confectioner sugar if needed)
I grease my table and hands as needed and knead to get it to the consistency (pliability) I want. The original recipe calls for it to be covered in a light coating of shortening overnight in a sealed container, but I used it Saturday after just making it and it worked wonderful.
I haven't covered any board with fondant. I've heard of it but I'm afraid transporting it would mess it up. I take freezer paper (shiny side out) and tape it down on the bottom all the way around with clear packing tape. Make sure its shiny side out or you'll get grease spots.

Congrats on the success! I'm still umming and ahhing over whether or not to try MMF. Mini marshmallows are not that readily available in Australia.
CakeDays: regular marshmallows worked fine for my batch.
Thanks MBalaska, the ones most readily available here are white mixed with pink or peach. It is a bit annoying having to source some ingredients out of the U.S :)
I know I can get the mini ones online from U.S.A Foods, but they are a bit pricey. Everywhere I looked had regular sized marshmallows, but they were a mixed flavour bag.
I did try to get my partner to bring some back with him, but I had already filled 1/3 of his luggage with my requests.
lol...can you get white food coloring there? I use it quite often when I want to get a bright white. You can also make homemade marshmallows! lol That would probably be more of a pain than it's worth.
I haven't looked if we can get white food colouring here, I'm sure you could because there are places who stock Americolor. That was actually one of my requests, a big bottle of Americolor Bright White. Which will be in my hands in about four hours :D
Oh, if I went to the trouble of making marshmallows, I would be eating them straight away!

I'm about to get up from here and use that stand mixer method for my MMF! Got to get that LSU cake covered!
It is easier too to use some vegetable shortening to grease the inside of your mixing bowl and dough hook. It makes it so much easier to clean. Just start slow...LOL ! You don't want all the powder sugar flying every where when you start the mixer.
I have never made it in the mixer. I don't follow a recipe I just add sugar until it feels right to me. I think I will try it in the mixture next time...it would certainly be easier.....
Congratulations on your success!!!! I have never tried to make fondant because most that I know do not like it. I hear that the marshmallow one tastes better than the regular fondant!!! I had no idea that fondant had that much sugar in it. Wow!!! Your cake looks really cute and you did a wonderful job on it!!!!
I did it! I made MMF with my mixer!!! I will NEVER do it the old fashion way again!!!!! Had to go slow and my mixer got pretty hot, but I watched it and had to finish kneading and adding PS the old fashion way. But it was so much easier!!!! Thank you, thank you, thank you for the great tip!
congratulations CraftyCassie: it only takes 5 minutes to make, easy clean up, taste good, saves money. how can you go wrong.......now start saving for a bigger more powerful stand mixer. Who ever invented this MMF deserves a big pat on the back!!!!
