This recipe is off of the top of my head but this is what I think I used (recipe is at home and I am at work):

1 box pineapple cake mix

1 cup shredded unsweetened coconut

2 eggs

1/3 c coconut oil

1 cup coconut milk

2 tsp coconut extract

Baked at 350 degrees for 25 minutes

It was moist but that could be because I layered it with a pineapple filling. I think I might have overcooked it a little because it was a little on the brown side. You can slice it and pick it up to put on a plate but it is still crumbly so I'm concerned about doing several layers for a wedding cake next weekend. I also did it in a hurry since it was just a tester cake and I wanted to be able to bring it to work today. I wonder if it was the ingredients or just the fact that I didn't take my time with cooling and what not.

Any help would be appreciated! :)
