Has anyone made ganache using Trader Joes one pound plus milk choc. bars? Last time I made it - it was too soft....I'm wondering if the 2:1 ratio I normally use to make ganache is too much...(obviously it was)....

AI haven't used Trader Joes but I've heard it's very good. With Milk or White Chocolate I use less cream b/c they tend to be softer 3:1

ADoes Trader Joe's also have white chocolate available?

I have not seen white chocolate available there....but they sell pound plus bars of dark, semi (I think) and milk chocolate and are very reasonable
