Hello all!

 

I'm making a wedding cake for a friend of a friend which is in about 3 weeks.

The top tier is fruit cake which will be cut on the first year anniversary whilst the other two tiers are mud cake. 

 

I used Mich Turners Masterclass fruit cake recipe, the 6 inch cake was in the oven for 2 hours, I inserted a skewer and it came out clean. 

 

I made two cakes just incase, being curious, I cut one of the cakes in half and I'm not sure if its undercooked or just very moist because it holds it shape and as I said the skewer was clean.

 

I don't know if I should make the cake again or this is just how this fruit cake is?

ABella, not sure if 2 hts is long enough, i made a 12 inch in june for a bottom tier, said 6 hr.omg, not near enough time, so undercooked, it took 2 more hrs and even then if i'm honest could do with longer.

I don't know the recipe that you have used but fruitcake should be moist.  It is horrible if it is dry.  Have a close look at the cake between the fruit and that should show you if it is cooked.  Also taste the cake that you have cut.  Does it taste undercooked or does it just taste luciously moist from the moisture in the fruit.

hmm, confusing because the recipe said 2 hours and the skewer was clean :(

The cake tastes quite nice and holds its shape, however it has an undercooked look, is this normal?
