I read that each tier should be on a cake board, but it isn't clear just how to do it. Does the board have to be covered in foil or do you use the cake board as is? If you use it as is, won't the cardboard get soggy?

I use tuffboards which are corrugated plastic, but you can get waxed cardboard rounds that are moisture resistant.
I've made a few others. I just put the tiers on top of each other. I try to avoid wedding cakes. sometimes I just can't say no. I'm always trying to make the next cake better than the last. So any tips are appreciated. Thank you.
If you've just been putting the cakes right on top of each other you're lucky that they haven't sunk into each other! Read the link that CWR posted, and it will show you the right way to dowel a cake. A stacked tiered cake should be supported by the dowels and plates in the structure of the cake, not by each cake supporting the ones on top of it.
