AMaking white chocolate much cream do I need for 2.1 lbs of white chocolate??? I know its 3:1. My first time. The chocolate one is made and in the fridge..I can't access the ganacherator.. Help!!:cry:

White chocolate ganache is a 4 to 1 ratio...its not really chocolate and it has more water in it.  So divide 4 into 2.1 lbs.  HTH

I also do not put my ganache in the frig it will get really hard.  Just let it cool and thicken on the counter. cover with plastic wrap right down on top it.

If you break it down into ounces, it will be easier for you.

2.1 lbs would be 33 ounces, if you want a 3 to 1 ratio, you would do 11 liquid ounces of cream.


Not sure if you meant the ganache is setting in the fridge or has already set and is now in the fridge, but you never want to set it in the fridge. Always at room temp.
