sometimes my cakes seems to be more crumbly than others. same recipe,sometimes moist and dense but at times crumbly do not know what am doing wrong!
AThis could be due to your flour. Flour harvested at different times of the year and in different areas of the country will have different protein amounts and moisture levels. The result is variablilty in your cake. The effect can be lessened if you are weighing your flour for the most accuracy possible. Otherwise, there's not much you can do about it.
