AAny scratch bakers have a recipe/method for making the Neopolitan (vanilla,strawberry,chocolate in one) cupcake? I have some recipes actually but I'm always open to new ones. More so wondering about the method? How do you keep the layers sitting on top and not turning into more of a marble kind of look?
I use the same base recipe and add to it to make sure they bake evenly.
I'll put in the first layer and freeze for a few minutes, just until slightly firm, then the next layer, and back in the freezer, then the third.
My batter is relatively thick as well, but this results in the layers staying exactly where I put them.
They always bake evenly as well, as long as I dont forget about them and let them freeze completely :P
