AI bought a sheet cake pan shaped like a castle but now I want to stand it up behind a two layer sheet cake as a backdrop. How can I stand a sheet cake up or put it on an angle?

AIf it HAS to made of cake, I would definitely use a pound cake without filling and "glue" it to a board with white chocolate. If it can just be decorative, make some Rice Krispy treats, press them into th pan to get the details, ice or cover in fondant, decorate as you would a cake and then glue it to the board with melts wet chocolate. You will need to consider how you will support whatever you decide to stand up behind your cake - I would use a thick particle board ( or whatever, just so long as it is not cardboard) for the base so that you can drill into it to put dowels or skewers down into the board behind the castle.
