Carrot Cake For A Wedding....without Pineapple, Coconut, Nuts, Raisins?

I have a carrot cake recipe that I love, love, love - it has all sorts of yummy bits of carrot, crushed pineapple, and raisins.  However, I have a wedding order due next month and they have requested a "traditional" carrot cake "without all that other stuff in it" and after fiddling with a few different recipes I have not really found *the one*.  Does anyone have a recipe they know is a certifiable crowd pleaser?  If so - could you please share?  Pretty please? :)

I posted an orange carrot cake recipe in the recipe section here on CC that has always been a big hit when I've made it.  I've always been told it has very good taste and texture.

Yep, that's the one.  It's the only carrot cake I make any more and my family and friends love it.
