Never heard of carrot cake jam. I have a feeling it is too sweet.
When I make carrot cake I use (sleeved) pineapple filling/jam.
As delicious as that jam sounds, I think it would be better layered with a white cake, or something else a little less 'busy' than carrot cake. I think it would either be overkill, or just get lost in a carrot cake.
Ginger jam is lovely with carrot cake though, I use it sometimes in place of one or two of the butter cream layers.
Or in a cream cheese pound cake! Kind of like a reverse-carrot-cake sort of deal
